Tasty Liver Casserole

Yup...Liver....hehhe.. I honestly would never eat liver but this recipie is sooo good..Kasyfi ate it all up...
Apparently liver is easy to digest, its very easy to cook (even hopless me can do it) and its a good source of iron.

This recipie is good served with mashed potato.

ok, you need:

100g calf's liver, trimmed and sliced
2 tablespoons vegetable oil
1 small onion, peeled and chopped
1 large or 2 medium carrots, (apprx. 125g) peeled and chopped
200ml chicken or vegetable stock
2 medium tomatoes (approx 200g) skinned, deseeded and chopped
1 dessertspoon fresh parsley, chopped

The method:

Saute the liver in 1 tablespoon of the oil until browned, then set aside.
Heat the remaining oil in a saucepan and saute the onion for 2-3 minutes.
Add the chopped carrot and saute for 2 minutes, then pour over the stock, bring to the boil, cover and simmer over a low heat for about 15 minutes.
Chop the liver into pieces and add to the pan together with the tomatoes and parsley, and cook for about 3 minutes.

You can either serve with mashed potatoes as it is or blend the mixture for a few seconds to make a rough puree.

Nyamaaan berabis, considering it's LIVER...eeeeeeee...
